Paleo Green Tea Coconut Ice Cream Recipe

Guess who just bought a new ice cream machine? It’s me! A healthy alternative to regular ice cream, this paleo green tea ice cream recipe calls for coconut and almond milk, and is sweetened with honey. I stopped eating dairy and refined sugar back in March when I did the Whole 30, and it made me feel so much better so I just kept going with it. Now I basically have a paleo diet. It’s great, but when things start heating up in Texas summer, you have to find ways to keep cool. And who doesn’t like ice cream? So, I bought this ice cream machine in order to enjoy the chill treats that usually make my summer.

Green Tea Ice Cream Ingredients

1 Cup Full Fat Coconut Milk
1 Cup Almond Milk
1/4 Cup Local Honey
2-3 Tablespoons Green Tea Matcha

Green Tea Ice Cream Instructions

It turns out that green tea ice cream is very easy to make. Chill the ice cream maker bowl in the freezer ahead of time. Mix together all of the ingredients, put them in the ice cream maker bowl, and turn the machine on for 30-40 minutes. Then, either eat all of the ice cream right there, or transfer it into another container to store in the freezer and enjoy later.

Make sure to use full fat coconut milk. The first few ice cream batches that I made used reduced fat coconut milk, and the ice cream fell apart like a slushy. Slushies are great, but that’s a different recipe. If you want to make this recipe creamier, add an avocado or 1/4 cup dates. The dates will also make the ice cream sweeter. This ice cream is really sweet enough for me as it is, so I actually use less honey.

As an added bonus, the matcha will help wake you up a bit. It can pull you out of a food coma at the end of a meal, or relieve that three o’clock siesta feeling. Matcha powder is notorious for having as much or more caffeine as coffee, and avoiding that jittery feeling. If you like caffeinated ice cream, add more matcha!
