Paleo Rainbow Bagel Recipe

Stir up your morning with a little psychedelic fun from this paleo rainbow bagel recipe. You may have heard of the fun and festive rainbow bagels people have to travel to Brooklyn for. A few rainbow bagel recipes popped up on the internet, but none that met my health requirements. So, I came up with one myself. It was just as fun to make as I thought!

The foundation for this recipe was the most authentic bagel recipe I could find (linked below). It is so delicious! I mean, this smells amazing coming out of the oven. Most of the other bagel recipes were basically muffins poured in doughnut pans. This one calls for the classic bagel boil before popping it in the oven. In order for the dough to hold together, this recipe includes tapioca flour which increases elasticity but is also very high in carbohydrates.

Now, without further ado, here’s the recipe!

Course Breakfast
Servings 6 Bagels
Prep Time 1 Hour
Cook Time 15 Minutes

Ingredients

Grain Free Bagel Ingredients
Water Bath Ingredients

Instructions

  1. Stir together the water, maple syrup, and olive oil in a mixing bowl until well combined.
  2. Sprinkle the yeast on top, and wait a few minutes.
  3. Add the egg, and whisk until fluffy.
  4. Combine the flours and salt together, and fold into the water mixture. The dough may flake at first depending on what you mix with, but it should hold together well as you fold it on itself.
  5. Prepare six colors of natural dye in six small bowls with a little bit of water. More pigment is better and makes for brighter rainbows.
  6. Separate the dough into six even balls, and mix each ball into one of the dyes. I pressed the dough out into crumbles with a fork, and then folded it together until the color was well combined.
  7. Preheat the oven to 450 degrees. Prepare the water bath in a saucepan, and bring the water to a boil.
  8. With a spatula, carefully scoop a rainbow bagel into the water bath. When it floats to the top, scoop it out and transfer to the baking pan.
  9. Bake for 10 minutes or until golden brown.
  10. Garnish with dairy free cream cheese, paleo rainbow sprinkles, and enjoy!
